A chilled pea soup with the fresh flavor of mint, delicious with a swirl of creamy yogurt. Easy to make on a hot evening, and beautiful enough to serve up as a fancy hors d’oeuvres!
In a medium pot, saute onion and garlic in olive oil until softened. Add the peas and broth and bring to a boil, then reduce heat to medium and let simmer for 5 minutes. (Avoid extended cooking to retain a bright green color.)
Let soup cool slightly, then add chopped mint and puree with an immersion stick blender, seasoning with salt and pepper to taste. Chill completely, and serve with a dollop of yogurt.

Cold peas never seemed appetizing until tasting a chilled pea soup served at L’Ecole, the French Culinary Institute restaurant in NYC. Their’s was served in a small ceramic spoon with a swirl of creme fraiche and bits of fried prosciutto , which left me craving for more. Your recipe, although different with mint, sound equally fabulous and I must try it!
