Description

A simple and seasonal chilled English pea soup topped with radish and pea greens.

Ingredients

  • 2 cups Shelled Fresh English Peas, Lightly Blanched, Drained And Cooled
  • ¼ cups Warmed Heavy Cream
  • 2 dashes Salt And Pepper, to taste
  • 3 drops Lemon Infused Olive Oil (I Substituted With A Few Drops Of Extra Virgin Olive Oil And The Juice Of Half A Lemon)
  • 1 cup Water Or Vegetable Broth - Add Sparingly Until Desired Consistency Is Reached

Preparation

Place all ingredients except water or broth in a high speed blender. Add water or broth until velvety smooth. Season to taste. Serve very cold with shredded or julienne radishes, diced ham of your choice and a fresh pea sprout or two on top. Have fun!

As I have not tried this recipe with frozen, I can’t say for sure. Most of the time, frozen is a good substitute for fresh…but this soup is all about the fresh spring peas. I have seen other recipes that use frozen as a sub…so my guess is you could try it..but I can’t guarantee the same quality result as if you use fresh. Did that help? :) LOL!
