Yummy!! I used a rotisserie chicken and a combo of cheddar and mozzerella since that’s what I had. Turned out great! I will be making this again!

I LOVED this soup. My girlfriend and I had two servings each and I even sent her home with some leftovers. Next time, I think I’ll try serving it over rice, as my husband complained that it was not filling enough as is.

Delish! I cook chicken breasts in the crock pot with the veggies & spices all day, then add the tomatoes & tortillas about an hour before serving. A mild recipe that even your kids will love. Another must-try recipe!

I make this soup and love this soup. It is such a great go to recipe. For extra goodness and a twist I add shredded kale or collard greens.

Does anyone know if this freezes well?

I haven’t tried freezing it yet. I bet if you freeze it before you add in the tortillas you’d get the best results.

Miss Tada! I made this soup Sunday & it was so yummy! My daughter & I bought the hard tortillas by accident & decided to just break some up & sprinkle on top when serving & they absorbed some of the juice & flavor, but I want to try some with the flour ones. Do they get soggy???? ANYWAYS… thanks for the great recipe! T

TMarie – I’m so glad you enjoyed this soup! I buy the soft round corn tortillas (about 6″ diameter?), the kind you would roll up when making enchiladas. Click on the related link (above) to see the photos of when I made this last and you’ll see them cut up there. They do get very soft in the soup, and also help to act as a thickener. They are my favorite part!

This soup is great! When hubby says ‘it’s a keeper’, I know it is something special! I didn’t have Rotel, so I doubled the diced tomatoes and sauted a jalapeno with the veggies to add some heat and pepper flavor. Wonderful!

I just made this and it was delicious, thank you. My family was drooling as it simmered. Even my picky eater tasted it and smiled.
