Description

Think Olive Garden, only better!

Ingredients

  • 3 whole Chicken Breasts
  • 1 whole Lemon, Juiced
  • Salt And Pepper
  • 1 whole Sweet Onion, Chopped
  • 2 cloves Garlic, Minced
  • 2 Tablespoons Olive Oil
  • 4 cups Chicken Stock
  • 1 package Gnocchi (16 Ounces)
  • Salt, Pepper, Parsley And Celery Salt To Taste
  • 1 cup Heavy Cream
  • 1 cup Half-and-half
  • 1 cup Kale, Finely Chopped

Preparation

1. Preheat oven to 375F. Bake chicken breasts with lemon juice and salt and pepper until cooked thoroughly (approximately 22 minutes). Dice or shred meat. Set aside.

2. Over medium heat, saute the sweet onion in a soup pot with garlic, and olive oil until onion is see-through.

3. Add 4 cups chicken stock and the diced or shredded chicken to pot. Bring to boil, add gnocchi and herbs/spices and cook for 3-5 minutes. Turn heat down, add cream and half and half, and let simmer for 10 minutes.

4. Turn heat back up to medium, add kale and let wilt down- 3-5 minutes.

5. Serve.

This was simple, delicious, and a hit with the boyfriend! Definitely will be adding this to my winter dinner rotation.

The only changes I made were escarole instead of kale because they were out at the grocery store & only one cup of heavy cream instead of two.

Very good! Really loved this.

It came out pretty good! I did make some minor changes though– I added carrots and substituted spinach for kale.

Next time though, I think I’ll try half and half instead of heavy cream or maybe a little less. The consistency is a bit too thick for my liking.
