Description

Just like restaurants serve, only better! The perfect combination of broth, chicken, cheese and cilantro makes this soup a favorite!

Be prepared to share the recipe when others try it!

Ingredients

  • 3 pieces Chicken Breasts, Thinly Sliced Or Shredded
  • 3 Tablespoons Olive Oil, Divided
  • 1 whole Small Sweet Onion, Diced
  • 2 teaspoons Minced Garlic
  • 1 can Rotel Brand (Lime Juice And Cilantro) Diced Tomatoes And Green Chilies, Undrained, 10 Ounce Can
  • 1 whole Large Tomato, Diced
  • 1 Tablespoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoons Cayenne Pepper
  • 6 cups Low Sodium Chicken Broth
  • 2 whole Carrots, Sliced Into Small Pieces
  • 1 can (15 Oz. Size) Corn, Drained
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • ½ teaspoons Salt, Or To Taste
  • ½ teaspoons Black Pepper, Or To Taste
  • 2 cups Shredded Monterey Jack Cheese (or Any Mexican Blend Cheese)
  • 1-½ cup Cilantro, Chopped
  • 1 whole Avocado, Peeled, Pitted, And Cut Into Chunks
  • 1 bag Corn Tortilla Chips, Crushed, For Optional Garnish
  • 1 whole Limed, Quartered

Preparation

In a large frying pan over medium high heat, fry chicken in 1 tablespoon of olive oil. Add a dash of salt and pepper and cook until the slices are all lightly browned. Set aside.

In a large stock pot, heat 2 tablespoons of olive oil over high heat. Add onions and garlic, and saute for aproximately 3 minutes.

Stir in Rotel canned tomatoes (undrained), fresh tomato and spices, then bring to a boil.

Add the broth, carrots, corn, black beans, cooked chicken and salt and pepper. Return to a boil, then reduce heat to medium and cook another 10-12 minutes.

Ladle soup into bowls and top with cheese, cilantro, crushed tortilla chips, avocado chunks and lime juice to taste.

* You can also use a prepared rotisserie chicken in place of the chicken breasts. If you do this, just add it towards the end of the cooking time.

This is a great tortilla soup recipe! I used leftover turkey from thanksgiving instead of cooking my own chicken.
My husband likes his soups a little thicker so I used a little less chicken broth and thickened it a little with some mashed beans and flour. We also didn’t have any monterey jack – and cheddar worked just fine (although I would definitely get a mexican cheese next time!) This is a really good and versatile recipe. Big hit!
