Description

Exactly what it sounds like, this soup tastes JUST like a cheeseburger! Good for you, ready in under 20 minutes, and sure to please everyone.

Ingredients

  • 1 cup Diced White Onion
  • 1 pound Extra Lean Ground Beef
  • 2 Tablespoons Worcestershire
  • 3 Tablespoons Tomato Paste
  • 1 Tablespoon Yellow Mustard
  • 16 ounces, fluid Reduced Sodium Beef Broth
  • 4 ounces, weight 2% Milk Velveeta
  • 1 pint Diced Cherry Tomatoes
  • 2 cups Chopped Iceberg Lettuce
  • Pickles And Cooked Bacon For Garnish

Preparation

1. In a soup/stock pot on medium heat, saute onion until translucent, 3 or 4 minutes. Add in ground beef and cook until browned, about 3 minutes. Add in Worcestershire, tomato paste, and mustard. Saute until fragrant, 2 or 3 minutes.

2. Add in broth and cheese. Stir until cheese has melted, 4 or 5 minutes. Add in tomatoes and lettuce. Let sit 2-4 minutes, or until lettuce has JUST wilted.

Serve with chopped pickles and bacon!

This was incredibly delicious and the family loved it! However, once I added the cheese and the broth I really didn’t feel that it’s six servings. I ended up doubling the recipe at the last second. If you’re serving this as a meal, you’ll want to double it. :)

was super tasty and not too velveeta-y. sometimes that cheese can be a bit overpowering. i totally forgot to garnish with the bacon and pickles. and i made a comment at dinner that it needed pickles!
great recipe. will most definitely be making this again. loved how simple it was!
