Description

A simple, healthy and nutritious soup to kickstart the new year!

Ingredients

  • 2 Tablespoons Olive Oil
  • 1-½ teaspoon Ground Cumin
  • 1 pinch Chili Powder (optional)
  • 1 pound, 5-¼ ounces, weight Carrots, Washed And Coarsely Grated
  • 5 ounces, weight Split Red Lentils
  • 4 cups, 3 tablespoons, 1-⅞ teaspoons, ¼ pinches Vegetable Stock, Hot
  • 8 tablespoons, 1 teaspoon, 5-⅞ pinches Milk
  • Salt And Pepper

Preparation

Combine the oil, spices, carrot, lentils, stock and milk in a large saucepan and bring to the boil. Simmer for approximately 15 minutes, until the lentils are swollen and soft.

Puree the soup with a hand blender (or jug blender/food processor should you have such things) until smooth. Season to taste with salt and pepper.

Garnish with grated gruyere and a little extra pepper before serving.
