Description

This Veggie Tortellini Soup is a warming and comforting dish, perfect for those cool fall or cold winter nights. Super flavorful, incredibly easy to make and very satisfying, this soup is an all-around great recipe for the whole family!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1  Medium White Onion, Chopped
  • 4 cloves Garlic, Minced
  • 1-½ cup Diced Tomatoes
  • 1 Tablespoon Tomato Paste
  • 6 cups Vegetable Broth
  • 2 cups Carrots, Sliced
  • 1 teaspoon Sea Salt
  • 4 cups Kale, Chopped
  • 9 ounces, weight Refrigerated Tortellini

Preparation

Heat oil in a large Dutch oven. Add onion and sauté until translucent (3–4 minutes). Add garlic and sauté until fragrant (2 minutes).

Add tomatoes (can be substituted for canned, same measurement) and tomato paste, stir and sauté for another 3–4 minutes.

Add broth, carrots and sea salt. Stir, cover and simmer for 10 minutes. Lastly, add kale and tortellini. Cover, turn heat to low and simmer for 6–7 minutes.

Serve hot.
