Description

If you like hot stew on a cold day, and you like quinoa, beef or sweet potateos, you should like this soup. Enjoy!

Ingredients

  • 1 Tablespoon Oil
  • 1 pound Beef
  • 1 whole Medium Onion, Chopped Coarse
  • 6 cloves Garlic, Roughly Chopped
  • 2 cups Canned Crushed Tomatoes
  • 4 cups Chicken Broth
  • 1 whole Medium Carrot, Chopped Coarse
  • 1 whole Green Bell Pepper, Chopped Coarse
  • 2 whole Bay Leaves
  • 2 whole Dried Red Chiles, Torn In Half
  • 5 whole Allspice Berries
  • 1 teaspoon Dried Thyme
  • 15 ounces, weight Can Pink Or Red Beans, Drained And Rinsed
  • 1-½ teaspoon Salt
  • 1 cup Quinoa, Washed Well
  • 3 whole Medium Sweet Potatoes, Peeled And Chopped Medium
  • ½ bunches Kale, Deribbed And Roughly Chopped

Preparation

1. Heat oil over medium heat in a pot. Add the beef and brown on all sides, about 3 minutes each side. (I kept the beef in large pieces to make this step easier, but you could cube it first if you want.) Set beef aside.

2. Add onions and garlic to the pot and fry for a few minutes.

3. Then add the tomatoes, broth, carrot, bell pepper, bay leaves, chiles, allspice, thyme, beans, and salt to the pot. Return the beef to the pot and bring everything to a boil. Then reduce to a low simmer for 30 minutes.

4. Add quinoa and sweet potatoes and simmer 15 more minutes.

5. Add the kale and simmer 15 more minutes. Then check to see that the sweet potatoes and quinoa are cooked through and the kale is tender. Remove bay leaves, allspice and chiles. Serve.
