Don’t go turning up your nose at the thought of zucchini in cupcakes! This recipe is great for using extra zucchini if you have it, or if you like the taste, like me. Think of a carrot cake type of cupcake, but with a green tint instead of orange. This recipe has even passed the taste test of a person who claims to not eat zucchini at all. Little did he know he ate about 6 cupcakes worth of it

A bundt cake full of mini chocolate chips and flavored with just a hint of almond. An old family recipe, named for the first four ingredients on the list!

Uses mayonnaise instead of eggs or oil. This recipe has been handed down by my great-grandmother and is still my grandpa’s (her son’s) favorite cookie ever.

Almond dessert bars with sweet almond frosting. My Swedish aunt taught my mum to make kringle, but when my family moved to Belize in the early ’90s, Mum modified the recipe so that it no longer included eggs. We christened it Belizean Kringle, after the lovely little country in which it was invented.

These biscuit and breakfast sausage pinwheels are a hit for breakfast, lunch, or dinner. The recipe was given to my family from a now-passed, much-loved elderly neighbor. These savory pinwheels are pure comfort food!

This is the pizza dough I use at least a few times a month. I have adapted it and never had a problem! (Prep time includes rising time!)

This is a quick but beautiful dessert. Your friends will think it took hours to make. It doesn’t.

Spinach, ricotta cheese -mmm . . . But the cream cheese crust is the real star here. Oh my word, the cream cheese crust!

Her enviable TK recipe box is a testament to that. Go see for yourself!
