A recipe that originated in the state of Oaxaca, Mexico. The combination of flavors was so intriguing that I knew I had to try it. It would never have occurred to me to cook lentils with bananas and mangoes and yet it was delicious.

If you want meat (as my husband usually does), you can add grilled chicken or fish.

A tasty, incredibly simple yet amazingly nutritious side dish. The ease of canned beans combined with aromatic fresh rosemary and garlic makes this dish both easy and delicious!

I made this and added a bit of cumin as suggested. It was so good, just right on a cold, cold night. My husband & son loved it, so we’ll be having this again soon. But I will double the recipe!

So glad you enjoyed it Micki. It’s a favourite in my house too. It also freezes well if you wanted to make a huge batch.

I actually created an account to review this…what can I say? It’s too good not to try! I wound feeling lazy and grated the zucchini instead of chopping, but loved the texture that it added. This was fabulous, next time, I will have to double!

I tried this tonight and it wasnt a winner for me. I wont be making this again. I followed it to the t, also adding the cumin. The flavors were bland and it wasnt appealing to me.
