Description

Get ready for some football! Enjoy this classic oatmeal cream pie with a chocolate twist!

Ingredients

  • FOR THE COOKIE:
  • 1 cup Butter Flavored Crisco
  • ¾ cups Brown Sugar
  • ½ cups Granulated Sugar
  • 1 Tablespoon Molasses
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • 1-½ cup All-purpose Flour
  • ½ teaspoons Kosher Salt
  • 1 teaspoon Baking Soda
  • ¼ cups Unsweetened Cocoa Powder
  • ¼ teaspoons Cinnamon
  • 1-½ cup Quick Cook Oatmeal
  • FOR THE FILLING:
  • 1 Tablespoon Very Hot Water
  • 1 pinch Kosher Salt
  • 10 ounces, weight Fluff (marshmallow Cream)
  • ¾ cups Butter Flavored Crisco
  • ⅔ cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • FOR THE ICING:
  • 4 ounces, weight White Chocolate, Melted

Preparation

For the cookies:

Preheat oven to 350ºF.

In a large bowl, beat Crisco, brown sugar, granulated sugar, molasses, vanilla and eggs. Add flour, salt, baking soda, cocoa and cinnamon. Mix in the oats. Drop by 1 tablespoonful onto a parchment-lined cookie sheet (shape into an oval). Bake 7-8 minutes, until just starting to brown around the edges. Don’t overcook! While warm, pinch edges of cookies into a football shape if they have rounded too much.

For the filling:

After cookies have cooled, combine hot water with salt and mix until salt is dissolved. In a large bowl, beat marshmallow fluff with Crisco, powdered sugar and vanilla. Beat on high until fluffy. Add in salt water and mix until well combined. Spread filling on one cookie and press a second cookie on top.

For the icing:

Using melted chocolate, drizzle the top to look like a football. Allow to set about 10 minutes. Enjoy!

These were so cute and ridiculously delicious! My friends loved them and they were really easy to make. I received quite a few compliments and looks from my health conscious friends as they devoured these treats of “Oh no you didn’t” Thanks so much for posting this recipe, I will definitely be making them again!
