Description

These holiday bars are so delicious and easy to whip up! Chocolate and peppermint together are a delicious and deadly combination in this dessert!

Ingredients

  • 1 box (21 Oz. Family Size) Brownie Mix
  • Additional Required Ingredients Specified In Brownie Mix Package (typically Water, Eggs, And Oil)
  • 2 teaspoons Peppermint Extract, Divided
  • 1 package (16.5 Oz. Package) Refrigerated Sugar Cookie Dough
  • 16 ounces, weight Cream Cheese, Softened
  • 2-½ cups White Chocolate Chips
  • 4 whole Candy Canes, Crushed

Preparation

Make brownie batter according to packaged directions (you’ll typically need water, eggs, and oil, as directed in mix package). Stir in 1 teaspoon of peppermint extract. Bake and set aside.

Spray a 9×13 rectangular pan with non-stick cooking spray and spread sugar cookie dough along the bottom to create an even layer. Bake according to package directions, until edges are golden brown. Set aside to cool. Cut any harder crispy edges off the brownies. Scrape the rest of the baked brownies into a large bowl. Carefully mix cream cheese into brownies until it’s generally uniform in color. Carefully drop brownie mixture by the spoonful onto the baked cookie dough. Smooth the top gently.

Over a double boiler, melt the white chocolate. Gently stir in the remaining teaspoon of peppermint extract. Spread melted chocolate over brownie. Top with crushed candy canes. Place in the refrigerator until chocolate has hardened. Cut into bars. Store in refrigerator up to 5 days.

Peppermint bark is not my favorite so I made these with a different bark topping and used orange extract in the brownies and bark instead of peppermint. I thought they were wonderful! I had issues with the sugar cookie layer separating from the rest of it but it seemed the longer they sat in the fridge the less that happened. Great quick & easy recipe! and totally adaptable!

Personally, I liked this alright. I enjoy gooey sweets, so the bottom 2 layers were great. I didn’t love the topping of white chocolate. It was hard to cut and I also had a hard time scooping the bars out. I brought a 9×13 to a large potluck and maybe 5-6 people tried it. So, I’d recommend halving the recipe and making some brownies and sugar cookies with the extra.
