Description

I love it when the cupcakes and the icing don’t match. And this icing becomes somewhat firm within about a minute or two, which makes the cupcakes easier to transport without messing them up too much.

Ingredients

  • FOR CUPCAKES
  • 2 cups Cake Flour
  • 2 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • ½ cups Unsalted Butter, Softened
  • 1 cup Sugar
  • 3 whole Eggs, Room Temperature
  • 2 teaspoons Vanilla
  • ¾ cups (plus A Tad More) Whole Milk

  • FOR THE ICING:
  • ¾ cups Sweetened, Condensed Milk
  • 6 ounces, weight Semi-sweet Chocolate
  • 2 Tablespoons Butter

Preparation

Preheat oven to 350 degrees.

Sift together flour, baking powder, and salt.

With an electric mixer, mix butter and sugar on high speed until fluffy. Scrape sides of bowl and mix for a few more seconds. Add eggs, one at a time, mixing well after each addition. Add vanilla. Mix to combine.

Alternate adding dry ingredients and milk in three batches, mixing for a few seconds after each addition.
Scrape sides of bowl, then mix one final time.

Fill paper-lined muffin tins 3/4 full with batter. Bake for 20 to 22 minutes, or until poufy but not brown. Cool before icing.

Sticky Chocolate Icing:
Mix ingredients together in a small/medium saucepan. Melt ingredients over medium low heat, stirring gently. Icing is ready when all ingredients are melted and combined.

Spoon warm icing over warm cupcakes, stirring icing to smooth after every third cupcake or so. Allow iced cupcakes to sit at least ten minutes before serving.

WARNING: MUST BE SERVED WITH A GLASS OF COLD MILK!

I’m not sure if I did something wrong, but these were more like muffins than cupcakes. They weren’t very sweet (DH said they were more savory than sweet), and I didn’t really care for the semi-sweet chocolate frosting.

Why doesn’t think recipe have more reviews?! These are amazing! And the icing is incredible- its like chocolate jelly.

I used this recipe for my friend’s birthday – she doesn’t really like sweets and only likes yellow cake, go figure. But someone borrowed my cupcake tins so I made it a small square cake instead. It was a little dry the next day though I’m not sure if that’s my fault (I forgot about the milk until after the first two additions of dry ingredients), a result of it being the next day, or if that’s just the recipe. But it was super yummy and moist the day of!

My friend loved the cake and frosting. The semi-sweet chocolate balanced perfectly. & Afterwards, the frosting dries and firms up and reminded me of fudge. SO GOOD. I’ll definitely be making these again!

I liked these! Made them for my co workers at Christmas time and everyone was very excited and gave them good reviews. I forgot to add the milk though I think—woops. Bet they will be even better next time when I remember all the ingredients!!!

I haven’t made the cupcakes, as I use my own recipe, but the frosting is so easy and so delish!
