These cream-filled chocolate cookies are something you see everywhere when you’re in Amish country. Very soft cookie with an awesome cream filling.
Beat together shortening and sugar, then add egg and vanilla. Stir together flour, chocolate drink mix, salt and baking soda; add alternately with milk. Drop by rounded tablespoonfuls onto cookie sheets lined with parchment paper. Bake at 350° for 10-12 minutes.
For filling: Beat marshmallow creme and butter together. Add powdered sugar and beat WELL. Spoon filling into the middle of half the cookies. Top with remaining cookies.
Note:
I like to wrap these individually and put them in the freezer. They make an easy treat for kids and adults.

To add to my initial review, if you don’t have “drink mix” like Quik or Ovaltine do NOT substitute regular cocoa for it as it will not work.. ask me how I know! It isn’t sweet enough, and comes out much to thick like cookie dough as opposed to how it should be which is a bit like whipped frosting.
This recipe only makes 18 whoopies for me, so only 9 pies when put together. My heaping tablespoon is more like two tablespoons, so that explains it. This large it takes mine 14 minutes to cook to perfection.
Lover boy is sooo loving these, and they go straight to the freezer when done now so that he can pull one out for an afternoon snack each day – they don’t freeze, they just get nice and cold and perfect!

These are an easy, tasty and fun dessert. Something different than my ordinary cookies, pies, cakes and quick breads.
I used Ovaltine in place of the Quik drink mix, because it is all I had. It didn’t make the whoopies quite as chocolately as I imagined they should be, so I also added 1/2 cup cocoa to the filling for some added chocolate goodness. Ialso didn’t have enough marshmallow creme, so I added in some cream cheese there. All of this made one excellent whoopie.
And they are GREAT frozen! I wrapped them in saran wrap like the creator mentioned and popped them in the freezer today. After dinner we wanted dessert, and we took them out and instead of waiting to thaw we just dug right in – and now I think I have found the PERFECT summer dessert for all those nieces of mine!
