Description

Not pretty to look at , but boy are they good!

Ingredients

  • ½ cups Shortening
  • 1 cup Sugar
  • 1 cup Pumpkin
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • ¼ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1-½ cup Butterscotch Chips

Preparation

Preheat oven to 350 degrees. Slightly grease a cookie sheet.

Cream shortening and sugar in a mixer until smooth. Add pumpkin and vanilla. Combine dry ingredients and add to the pumpkin mixture. Add chips and mix well.

Mixture will be sticky, so I recommend using a small scoop onto cookie sheets. Bake 9-11 minutes and cool on sheets 1 minute before removing to racks to cool.

Note: the shortening in this recipe can easily be replaced with an equal amount of applesauce to cut the fat. They still taste great, but are just as ugly!

Pumpkin cookies are my favorite. I tried your recipe and they may not be the best looking but they sure are one of the best tasting!

These were delicious. Everything I wanted them to be. I used chocolate and white chips instead of butterscotch. They are definitely ugly. But they taste wonderful!
