Speculoos is given and eaten by our children when St Nicolas is bringing gifts, on December 6th. It is a Belgian tradition, we eat those cookies from Fall until the end of Winter !
In a medium bowl, mix flour, soda, brown sugar and spices. Add butter (cut in little bits) and milk. Mix to make a light dough.
Set aside in the fridge for 3-4 hours or for a complete night.
Use speculoos pan (that represents Saints of animals), sprinkle it with flour (just a little) and press dough on it. Remove the excess with a knife. Turn out the dough from the speculoos pan and put it on a lightly greased flat pan.
(if you don’t have a speculoos pan, spread the dough and cut it with cookie cutters).
Cook the speculoos in a preheated oven (400°) for 15 minutes.

I love Speculoos, but my husband LOVES Speculoos. He is anxiously waiting for me to try these. We can get them here under the name Biscoff, but I would love to make my own. I will let you know how it goes!

Thanks so much for the comments on my blog. I was on vacation for a few days and it was such a treat to hear what you had to say. Ok I love Biscoff cookies, and I’ve heard they are Speculoos. I tried making a recipe last year, but it wasn’t good at all. I’m going to try your recipe today. I have to admit I actually love to fly on Delta Airlines because they give you Biscoff cookies! Yummmmmy! Thanks for the friend invite, and I can’t wait to read more. Lisa
