Description

Homemade oatmeal cookies with walnuts and chocolate chips, and a hint of cinnamon and nutmeg. These cookies come out of the oven soft, chewy, and ready to eat!

Ingredients

  • 1 stick Unsalted Butter, Softened
  • ½ cups Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 whole Egg
  • ¾ cups All-purpose Flour
  • ½ teaspoons Baking Powder
  • 1 pinch Salt
  • ½ teaspoons Ground Cinnamon
  • ¼ teaspoons Nutmeg
  • 1 cup Oats
  • ½ cups Semi-Sweet Chocolate Chips
  • ¼ cups Chopped Walnuts

Preparation

1. Preheat oven to 350ºF.
2. In a KitchenAid mixer with paddle attachment or electric mixer, cream butter and sugar together.
3. Add vanilla and egg and mix on low speed.
4. Combine flour, baking powder, salt, cinnamon and nutmeg in a separate bowl.
5. Add flour mixture a little at a time on low speed.
6. Add oats and mix until just blended.
7. Stir in chocolate chips and walnuts by hand with a spoon.
8. Using a teaspoon or cookie dough scooper, drop rounded balls of dough on a baking sheet.
9. Bake for 10-12 minutes, until slightly golden brown. Do not overbake or cookies will be too hard.
10. Transfer to a cooling rack with a spatula.

Nice, soft cookies! I left out the nutmeg. Also had to cook a bit longer than suggested. Very tasty!

Delicious! I made these today and my husband and his friends loved them. I used pecans instead of walnuts and baked the cookies on parchment lined cookie sheets. Next time, I am going to double the recipe. They go fast and you will want more.
