Beautiful chunks of fresh strawberries in a creamy filling sandwiched together by two light and chewy oatmeal cookies.

These cookies are flourless, made with a nutty almond butter, slightly sweet from the combination of sugar and brown sugar, with a rustic feel from the gluten-free oats. Add dark chocolate cocoa powder for a cookie that is gooey on the inside and crispy on the outside!

Adapted from a Nigel Slater recipe, these sweet little buttery shortbread cookies come alive with the flavour of rosemary.

I accidentally rated these with three mitts! I am sorry to bring down the average… it was accidental clickage!! I’m sure they’re delicious and I promise to try them soon! I’m sorry!

I did the same thing! I’m sure the cookies are really good and when I make them, I will definitely rate them for real. Sorry about that!

I tried to add marhsmallows to my cookies once and they turned rock hard. I can’t wait to try this and add the marshmallows at the end!

I had the same experience as Amy last time I tried to add marshmallows to baked goods. But you seemed to figure out the trick! I can’t wait to make these!

I made these last night with my kids, and we loved them. The kids especially had fun putting the marshmallows on the cookies half-way through the baking – making smiley faces and seeing how many marshmallows they could put on one cookie!
We managed to make 36 cookies. I do think that these cookies were best warm.

I made these cookies this evening–they are AMAZING! I admit I didn’t fully read the recipe before I started, so I was shocked that you bake the cookies on top of the graham crackers, but they turned out wonderful. (and yes, they taste like S’mores!!)
Everyone that tasted these raved. Thank you for sharing the recipe!

Hi I grew up in Prescott how about you? We did a lot of vacationing in CA a wonderful state. Your son will be proud when he grows up to brag that he was the inspiration for your cookie creation.
