Description

Don’t let the name scare you away. This is one of the most delectable cookies ever! My favorite by far. Literally to die for!

Ingredients

  • 1 cup Butter
  • 1 cup Firmly Packed Brown Sugar
  • 1 package (8 Oz. Size) Chopped Dates
  • 1 whole Large Egg
  • 3 cups Crisp Rice Cereal
  • 3-½ cups Flaked Coconut, Divided
  • ½ cups Chopped Maraschino Cherries
  • 1 Tablespoon Vanilla Extract

Preparation

In a 10-inch skillet, melt butter over medium heat. Stir in sugar and dates. Remove from heat. Stir in egg. Return to heat and continue cooking over medium heat, stirring constantly until mixture comes to a full boil. Cook for 4 – 6 minutes.

Remove from heat and stir in rice cereal, 1 cup flaked coconut, cherries and vanilla until well moistened. Let stand 10 minutes. Shape into 1-inch balls and roll into remaining coconut.

Makes 5 dozen.

I didn’t have any problem with the rolling…I did squeeze them a bit so they held together really well…
As for the 10 mins for cooling….mine were perfect temp after 10 mins…sorry about that…I hope it all worked out for you…we love these…my very favorite cookie!!

I made these for Christmas this year. They took awhile longer then 10 minutes to cool down enough to make balls and were never as firm as I had expected, but it all worked out. They are sweet and fruity- sortof halfway between a cookie and candy, and certain to be a hit with coconut lovers.
