Description

Yummy flour and semolina cookies coated with syrup make an excellent dessert!

Ingredients

  • FOR THE SYRUP:
  • 2 cups Water
  • 2 cups Sugar
  • 1 Tablespoon Lemon Juice
  • FOR THE COOKIES:
  • ½ cups Castor Sugar
  • 1 whole Egg
  • 1 pinch Salt
  • 4-½ ounces, weight Butter
  • ¼ cups Yogurt
  • 2 cups Flour
  • ½ cups Semolina
  • 1 teaspoon Baking Powder
  • FOR THE GARNISH:
  • 2 Tablespoons Hazelnut
  • 2 Tablespoons Pistachio
  • 2 Tablespoons Coconut Milk Powder

Preparation

For the syrup, mix water and sugar and cook it until it boils. Add lemon juice and boil for 5 minutes. Let it reach room temperature.

For the cookies, mix castor sugar, egg and salt until smooth. Add butter and continue mixing.

Add yogurt, flour, semolina and baking powder and mix with your hand until combined well. You will have a soft and nonsticky dough. You can add a little extra flour or yogurt if needed.

Preheat oven to 175ºC (350ºF).

Make small balls or oval shapes from the dough and place them on a baking paper in oven tray. Cook for 25 minutes until golden.

Take cookies from oven and pour syrup on them. Wait for about 4 hours before serving so that cookies can absorb syrup well.

Garnish with hazelnut, pistachio or coconut milk powder.
