Hearty, crunchy oatmeal bar cookies. Great for winter snacking. A snap to make.
1. Preheat oven to 350F. Lightly grease a 9″x13″ pan (this yields a very thin bar, I think you could also use a 9″x9″ pan, but obviously do adjust the baking time).
2. In large bowl combine oats, sugars, flour, and salt.
3. With pastry blender or two knives (or your hands), cut the butter into the dry mixture until it resembles coarse cornmeal.
4. Mix in vanilla.
5. Press the mixture evenly into the pan.
6. Bake 30 minutes or until golden.
7. Cool slightly, but cut into bars while still warm.

Thank you posting this recipe. It’s very similar to one I used years ago from a McCall’s Cookbook and my grown daughter is asking me to make it for her again. A terrific recipe. So simple and very hardy. We just broke the shortbread into pieces. It never would cut evenly anyway. A real substantial healthy easy recipe.
