Description

A soft and cakey root beer flavored cookie with delicious root beer frosting.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Butter, Softened
  • 2 cups Sugar
  • 1 cup Buttermilk
  • 2 whole Eggs
  • 1-½ teaspoon Root Beer Concentrate
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 4 cups Flour
  • FOR THE FROSTING:
  • ½ cups Butter, Softened
  • 2 teaspoons Root Beer Concentrate
  • 3 Tablespoons Water
  • 3 cups Powdered Sugar (or More)

Preparation

For the cookies:
Preheat oven to 400 F.

In a large bowl whip 1 cup softened butter with sugar. Add buttermilk, eggs and root beer concentrate and mix well. Add dry ingredients and mix just until incorporated.

Drop dough by large spoonfuls onto a baking sheet and bake at 400 F for 9-11 minutes. Then remove them from the oven and allow to cool before frosting.

For frosting:
In a large bowl mix 1/2 cup softened butter with root beer concentrate, water and powdered sugar. Spread on cooled cookies.
Store in an airtight container between layers of wax paper.

I have a thing about only buying ingredients at the grocery store, and not any kind of specialty store. I got mine at the local grocery store, in the baking aisle next to the spices and extracts.
