An incredibly healthy “cookie” that is almost too good to be true and ready in only 5 minutes.
In a food processor blend together almonds and oats until they resemble fine crumbs. Add in dates, peanut butter, and vanilla.
Pulse until everything comes together. The mixture may look crumbly, but just make sure you can form it into a “cookie”; if not, add a little more peanut butter to make sure everything will come together.
Once you get the consistency you want, form dough into cookies using your hands. This may take a few times pressing the dough together and working it into the size and shape you want.
Once formed into cookies, take a fork and press down to give yourself the classic peanut butter imprint.
Store in the fridge for up to 5 days. Enjoy!
