Description

A new take on a classic recipe.

Ingredients

  • ½ cups Heavy Whipping Cream
  • ¾ cups Pureed Pumpkin
  • ¾ cups Ricotta Cheese
  • ⅓ cups Granulated Sugar
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Nutmeg
  • ½ teaspoons Vanilla Extract
  • 8 whole Sugar Cones
  • 2 Tablespoons Chopped Chocolate Chips
  • 2 Tablespoons Chopped Walnuts

Preparation

In a large bowl, whip heavy whipping cream until firm peaks form. Spoon into a separate bowl and set aside. In the same bowl you just whipped the cream in, stir pumpkin, ricotta, sugar, cinnamon, nutmeg and vanilla together. Scrape sides and whip 1 minute. Carefully fold in whipped cream. Spoon or pipe into sugar cones and top with chocolate chips and walnuts. Serve.

This looks great Lauren. I’ve been looking for another recipe to help me use up the half can of pumpkin puree I had left after making pumpkin cupcakes.

Yum! It has a softer and creamier consistency than a regular cannoli, but still delicious!
