Description

Moist pumpkin goodness with thick maple frosting.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Butter Or Shortening
  • 2 cups Sugar
  • 15 ounces, weight 100% Solid Pack Pumpkin
  • 2 whole Eggs
  • 4 cups Flour
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 dash Each Ground Cloves, Nutmeg , Allspice
  • 1-½ teaspoon Cinnamon
  • FOR THE MAPLE FROSTING:
  • ½ cups Butter
  • 1-½ cup Brown Sugar
  • ¼ cups Milk
  • 1-½ teaspoon Maple Flavoring
  • ½ Tablespoons Vanilla
  • 1 cup Powdered Sugar

Preparation

Cookies:

1. Cream together shortening and sugar, then mix in pumpkin and eggs.
2. Mix together the dry stuff: flour, baking soda, salt and spices.
3. Combine the wet and dry ingredients together, stirring cookie dough until mixed.
4. Drop by big teaspoonfuls onto cookie sheet.
5. Bake at 350F for 9-10 minutes. Press down on the tops of the cookies with a spatula when they come out of the oven. This will give a nice flat surface for frosting.
6. Cool completely before frosting. Makes 4 dozen.

Maple Frosting:

Melt butter, sugar, and milk together in the microwave or in saucepan over low heat, until sugar is dissolved. Add flavorings and sugar. Adjust consistency with sugar, as desired, for spreadable frosting that will solidify thick when cool.
