Description

I saw some nice plums in the store and immediately got a plumcake in my mind.

Ingredients

  • 7 ounces, weight Butter At Room Temperature Cut In Small Pieces And A Little For Greasing
  • 7 ounces, weight Caster Sugar
  • 1 Tablespoon Vanilla Sugar
  • 4 whole Eggs
  • 7 ounces, weight All-purpose Flour And A Little For Dusting
  • 1-½ Tablespoon Baking Powder
  • 1 pinch Salt
  • 6 whole Plums, Halved And Pit Removed

Preparation

Preheat oven to 320ºF. Grease a round cake tin with some butter and dust it with some flower.

Put the butter and sugars in a mixer and beat until well combined. Then add an egg and beat until mixed through; add remaining eggs one at a time. When all eggs are added, let the mixer beat for 5 minutes. Add the flour, baking powder, and salt and whisk it carefully and very briefly through the mixture; you can do this with a spatula or with the mixer.

Put this mixture into the round cake tin and spread. Divide the plums over and then place the cake pan in the oven. After about 75 minutes, the cake will be ready. Check with the point of a knife if it is ready. When it comes out dry, the the cake is ready. Remove from the oven and let it cool slightly before you remove it from the tin

You can serve it with some lightly beaten cream if you like, but it is also very nice without it.
