Description

This is a sweet roll from one of our provinces in The Netherlands.

Ingredients

  • 1 pound, 1-⅔ ounces, weight All-purpose Flour
  • ⅝ ounces, weight Granulated Sugar
  • 1 whole Egg
  • 1-⅞ ounces, weight Fresh Yeast
  • 14 tablespoons, 1-½ teaspoons, 2 pinches Water
  • 3 tablespoons, 1 teaspoon, 2-⅓ pinches Milk
  • ⅜ ounces, weight Salt
  • 1 ounces, weight Butter
  • ½ pounds, ⅞ ounces, weight Dark Brown Sugar
  • 4 Tablespoons Cinnamon

Preparation

Preheat the oven to 225ºC.

In a large bowl, mix together the flour, granulated sugar, egg and yeast using your hands or a mixer. Then add the water, milk and salt. Knead 6 minutes by hand or machine. Then add the butter and knead for another 4 minutes. Divide the dough into balls of about 80 grams each and set them on a baking tray. Let them rest for 20 minutes.

Then roll each ball of dough into a 30 cm (1 foot) strand.

Mix the brown sugar with the cinnamon on a baking tray. Cover the strands of dough with a little water and then roll the dough through the sugar mixture. Turn the dough strand two times around your hand and then put the end through the middle (making a knot).

Put a sheet of parchment paper on a baking tray and place the knots onto the baking tray. Let them rise for 5 minutes. Then put the tray into the preheated oven and bake for 8 minutes. When done, place them upside down on a large rack or tray and let them cool.
