Description

These Pina Colada Cookies are definitely one of my very favorites. They are full of macadamia nuts, coconut, white chocolate, pineapple and tons of flavor!

Ingredients

  • 1 cup Butter, Softened
  • 1 cup Brown Sugar
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoons Coconut Extract
  • ¼ teaspoons Lemon Extract
  • 2-¼ cups Flour
  • 1 teaspoon Soda
  • ½ teaspoons Salt
  • 1 cup White Chocolate Chips
  • ½ cups Macadamia Nuts, Coarsly Chopped
  • ½ cups Coconut
  • ½ cups Dried Pineapple, Chopped

Preparation

Heat oven to 350ºF.

Cream butter and sugars until light and creamy. Beat in eggs one at a time, incorporating well, then extracts. In a separate bowl mix together flour, soda and salt with a whisk. Add to butter mixture, stirring just until blended. Fold in chips, nuts, coconut and pineapple.

Drop by rounded tablespoonfuls onto a cookie sheet and bake for 8-12 minutes. Do not overcook.

Cool on wire racks.
