Description

What is that secret ingredient for such wonderful crunch?

Ingredients

  • 1 cup Softened Butter, Unsalted
  • ½ cups Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • ½ cups Crushed Potato Chips, Regular Flavor
  • ½ cups Finely Chopped Pecans
  • 2 cups All-purpose Flour
  • ¼ cups Sugar To Use When Pressing Down Cookies
  • ½ cups Pecan Halves To Top The Cookies

Preparation

Cream together butter, sugar and vanilla.

Stir in potato chips, pecans and flour until well combined.

Form into small balls, about 1/2 inch in diameter.

Place on ungreased cookie sheet or on a parchment paper lined pan.

Press the dough balls down with bottom of a tumbler dipped in sugar.

Top each cookie with a half of a pecan.

Bake at 350F for 12 – 18 minutes, depending on the size of the cookies. Cool completely before serving.

Note: When they are done, the cookies should be light in color…like shortbread.

Hey, congrats on this! I love your blog, and I love that this recipe uses an unusual “secret ingredient” . I will definitely add this to my Christmas cookie repertoire.

Oh My Goodness So Good! The Texture of the Chips is amazing, you don’t taste the Potatoes you just get this amazing crunch with the buttery’ness of the cookies. I made them for my holiday bake this year and everyone loved them (just not my hips lol– I overindulged!).
Try them you won’t regret it. Directions were spot on. Only think I changed I halved my pecan halves I liked more of the cookie than the nut on top. But, they were good ether way that was just a personal preference.
