Description

Made with almond flour and agave nectar, these wafers have the perfect crunch and great flavor.

Ingredients

  • ¼ cups Olive Oil
  • 2 whole Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 2 cups Almond Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Agave Nectar

Preparation

In a bowl or mixer, combine the oil, egg and vanilla extract. Add the almond flour, baking powder, salt and agave. Mix until it comes together in a ball and does not stick to your fingers, but is moist.

Place the dough on a large piece of parchment paper and form a cylinder (about 1 1/2” in diameter). Wrap the dough cylinder tightly in the parchment paper and place in the freezer for 1/2 hour or in the refrigerator for at least 1 hour.

Preheat your oven to 350ºF. Remove the dough from the freezer/fridge and using a sharp knife, cut ¼” rounds and transfer to a cookie sheet. Bake for 12 minutes or until the tops are slightly golden.

These are chewy, not crunchy. The texture is pleasant, but I don’t like the taste much (I don’t know whether that’s due to the agave nectar or the almond flour). If I made these again, I’d definitely add cinnamon or something like that for flavor.
