These have a texture more similar to a muffin instead of a cupcake- so you can leave off the frosting and call it breakfast. Right?
To make cupcakes, preheat oven to 350 degrees F. Beat butter and sugar until fluffy. Add eggs, vanilla and zest of 2 oranges. Add flour, baking powder and salt. Add in milk.
Fill muffin cups 2/3 full (I use paper cup liners). Bake for about 20 minutes.
Meanwhile to make frosting, beat butter until fluffy. Add in powdered sugar, orange Crush and orange extract. Beat for about 4-5 minutes. Frost cupcakes when cooled. Enjoy!
