Description

A while back I collected recipes from everywhere. I don’t remember how I found this one but once I made it I knew I’d fallen in love!

Ingredients

  • 1 pound Mochiko (Glutinous Rice FLour)
  • 1 teaspoon Baking Powder
  • 2-½ cups White Sugar
  • 3 cups Whole Milk
  • 5 Eggs
  • 1 teaspoon Vanilla Extract
  • ½ cups Butter, Melted
  • 1 cup Sweetened, Flaked Coconut

Preparation

Preheat your oven to 350 and grease a 9×13 inch baking dish.

In a medium bowl combine Mochiko, baking powder, and sugar. In another bowl whisk together your milk, eggs, and vanilla extract.

Combine your dry and wet ingredients into one bowl and stir until blended. Add in the melted butter and coconut flakes, again stirring until combined.

Pour the batter into the greased baking dish and bake in the oven for one hour until the top looks golden brown.

Allow to cool completely before you cut into squares and serve!

I normally don’t enjoy coconut in my food, but I absolutely devoured these tasty squares!

I made this and it was really good just how I remember but I added another 1/4 stick of butter ; and fine chopped the coconut in my coffee grinder; it floated to the top and made it nice n crisp with the butter when It was finally cooked. good dessert .

Real similar to my recipe from back home! I bring this as a potluck dish. At first everyone is confused as to what it is but I never bring any home!

Good recipe! Folks from HI might think it needs more butter but I liked it! I put toasted coconut on top instead of inside.
