Description

Chocolate cupcakes filled with Nutella and topped with a Nutella buttercream frosting.

Ingredients

  • FOR THE CUPCAKES:
  • 8 ounces, weight Semi-sweet Chocolate Squares
  • 10 Tablespoons Butter
  • ½ cups Flour
  • 1-½ cup Powdered Sugar
  • 3 whole Eggs
  • 3 whole Egg Yolks
  • 1 teaspoon Vanilla
  • ¼ cups Nutella, For Filling The Cupcakes
  • FOR THE FROSTING:
  • ¼ cups Butter, Softened
  • ½ teaspoons Vanilla
  • 3 Tablespoons Milk
  • ¼ cups Nutella
  • 1-½ cup Powdered Sugar

Preparation

To make the cake:
Melt the chocolate and butter together. You can use a double boiler or the microwave. Just get it nice and smooth. Add the flour and powdered sugar. It will be very thick. Stir in the eggs, yolks, and vanilla until smooth. Pour batter into muffin tins. This will make approximately 12 cupcakes.

Bake at 350ºF for 15 minutes. Cool completely.

To make the frosting:
Mix together butter, vanilla, milk, Nutella and powdered sugar Mix until it is the consistency of frosting. You may need to adjust the sugar or milk to get it right.

Once the cupcakes are cool, use a teaspoon to scoop out the center. Fill with Nutella. Top with Nutella buttercream frosting.

I made these for my son’s birthday. I used a boxed chocolate cake mix but added some melted chocolate, sour cream and used melted butter instead of oil. I then followed the recipe as directed. They turned out awesome.

Entire family enjoyed them immensely. They are extremely rich – with that many eggs the texture is moist and gooey and dense. I did need to bake them about three extra minutes in my oven. But – the flavors and overall outcome – fantastic!

I love the frosting first of all! But my cupcakes didn’t meet my expectations. The batter reminded me brownie batter and that’s kind of how the cupcakes turned out. I had to bake them 13 minutes longer than suggested (I often have to bake things a little longer but not this much). Sorry, I wish I loved them!
