Description

This moist, dense cake is studded with apples and pecans, and flavored with a wee bit o’whiskey if you wish.

Ingredients

  • 1-¼ cup Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg, Freshly Grated
  • 4 Tablespoons Butter, Plus 1 Tablespoon For The Baking Dish
  • 1 cup Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1 ounce, fluid Whiskey (or 2 Tablespoons Water)
  • 2 cups Apples, Peeled, Cored, And Diced
  • ½ cups Pecans, Coarsely Chopped

Preparation

Preheat oven to 350ºF. Grease an 8″ square baking dish with 1 tablespoon butter. In a medium-size bowl, combine flour, baking powder, soda, salt, cinnamon and nutmeg; set aside.

Cream butter and sugar until fluffy. Add egg; beat again. Add vanilla and whiskey (or water); mix until combined. Stir in apples and pecans.

With a wooden spoon, mix in dry ingredients. Batter will be thick. Spread batter in prepared pan. Bake at 350ºF for 35 to 40 minutes, or until a pick inserted in the center comes out clean. Cool on a wire rack. Serve warm topped with whipped cream or ice cream.
