Description

Soft and sweet! A perfect summer cookie!

Ingredients

  • FOR THE COOKIES:
  • 2-¾ cups Flour
  • ½ teaspoons Baking Soda
  • 1 teaspoon Cream Of Tartar
  • Dash Of Salt
  • 2 sticks Butter
  • 1 cup Sugar
  • 1 whole Egg
  • 1 whole Lemon, Zested (Finely Grated)
  • 1 Tablespoon Fresh Squeezed Lemon Juice
  • FOR THE ICING:
  • 2 cups Powdered Sugar
  • 4 teaspoons Butter, At Room Temperature
  • 3 Tablespoons Fresh Squeezed Lemon Juice
  • ½ teaspoons Light Corn Syrup
  • ½ Tablespoons Or More Of Water Add Until Smooth Yet Thick Icing (not Runny)
  • Yellow Jimmies, Sprinkles, Sanding Sugar Or Crushed Candies For Decoration

Preparation

Preheat oven to 350ºF.

Combine flour, baking soda, cream of tartar, and salt in a medium bowl and combine thoroughly. Set aside.

In a mixing bowl, combine butter, sugar, egg, zest and lemon juice and mix on medium speed until well blended. Beat in the flour mixture until it is fully incorporated.

Grab sections of dough and roll into logs about 8 inches long; pat down the log and cut into 2-inch pieces. You could also just make these into balls and flatten them a bit into circles with the bottom of a sugared glass.

Bake for 10-12 minutes on a parchment paper lined baking sheet. You don’t want them to brown.

To make the icing, combine all ingredients except the toppings for decoration, and mix by hand in a small bowl until smooth. You want the icing to be on the thick side yet spreadable; add additional water or powdered sugar until you achieve this. You could also water it down and just glaze the cookies, your call. Top with your choice of the suggested yellow toppings for decoration and enjoy!

Made these the other day, but I didn’t have the lemon. But I did have a lime and an orange, so I made the batter divided it in half, but the lime in one hale and the orange in the other…Awesome! they wer gone in less than 24 hours. Also put a little of the onange and lime, juice and zest in the glaze. Check it out on my blog.
