Description

Who knew these classic treats were so simple to make?

Ingredients

  • 2-½ cups Confectioners Sugar Plus Extra For Sprinkling The Work Surface
  • 1-½ Tablespoon Light Corn Syrup
  • 1-½ Tablespoon Water
  • ½ teaspoons Peppermint Extract
  • 1 Tablespoon Shortening
  • 1 cup Semi-Sweet Chocolate Chips
  • 2 Tablespoons Butter

Preparation

Mix together the confectioner’s sugar, corn syrup, water, peppermint extract and shortening using an electric mixer until combined (mixture will be crumbly). Scoop out and knead on a confectioner’s sugar-dusted countertop until the mixture is a smooth white ball. Roll out to 1/4th inch thick using a rolling pin and freeze for ten minutes.

Using small circular cookie cutters, punch circles into the frozen peppermint “dough”. Freeze the circles again for ten more minutes.

Melt the chocolate and butter over low heat. Drop the peppermints in and smooth the chocolate over the tops to coat well. Lay each patty on wax paper and freeze until firm, about twenty minutes. Store in fridge.

Oh wow! I agree, this could be very hazardous! I already made the chocolate covered cookie dough for my husband – he loved them. I will have to make these for myself :D

I’m afraid this knowledge is going to be hazardous to my health.

Fun, easy and delicious! I just patted my peppermint stuff out flat and cut it into squares so I wouldn’t have any scraps, but otherwise stuck precisely to the recipe. My mom’s absolute favorite candy is peppermint patties, and I can’t wait to give these to her for her birthday tomorrow. I sampled two just to make sure they were up to scratch, and oh, yes, they certainly are. Thanks a ton for a real winner.

These were delicious! I had to add more butter to the chocolate to make it able to dip. Next time I might add more peppermint extract. Overall, good recipe though, and very tasty.
