This time of year I really appreciate recipes that don’t require turning on the oven. This recipe combines two of my favorites: peanut butter and chocolate. I used banana extract in lieu of the vanilla since we love the peanut butter-banana combination.
Boil the syrup and sugar together in a medium/large pot. As soon as it comes to a boil remove it from the heat and stir in peanut butter. Add vanilla (or banana) extract and mix to combine. Then gently stir in the cereal until well combined. Blend in the mini chocolate chips. Stir just a little so they don’t completely blend.
Spread into a greased 9×11 pan. Refrigerate until firm. Cut into 24 pieces.
