Description

A homemade, better and creamier version of vanilla pudding with vanilla beans.

Ingredients

  • 2 whole Vanilla Beans
  • 2 cups Milk, Divided
  • ¼ cups Sugar
  • 2 teaspoons Vanilla Extract
  • 1  Egg Yolk
  • ¼ cups Cornstarch

Preparation

1. Split the vanilla beans open lengthwise, then add them to the cold milk. Chill for at least 30 minutes to let the vanilla infuse.

2. Discard the vanilla beans. In a saucepan, bring to a boil 3/4 of the milk, the sugar, and vanilla extract.

3. In the meantime, mix together the rest of the milk, egg yolk and cornstarch in a bowl. When the milk mixture boils, add the cornstarch mixture to the pan, stir, and remove from heat as soon as it starts boiling again. Pour in individual containers right away, let cool, then refrigerate for at least 2 hours.

Serve chilled.

I love pudding! My mom would always make pudding the neighborhood kids and I. Those were good memories.

DO NOT DISCARD the used vanilla bean!!!! Put it in your sugar canister for yummy vanilla infused sugar.

I thought this was delicious. I only had one vanilla bean, so I used a little vanilla bean paste as well.

I must have messed something up. I knew it wouldn’t be perfect because halfway through prep I discovered I was out of cornstarch. However, I followed the rest of the recipe. I was concerned about throwing raw egg yolk into boiling milk, so I tempered it first. I also waited to put in the vanilla extract until the very end. Other than that, I followed the instructions.

The pudding didn’t set beautifully because I substituted flour for cornstarch and likely didn’t use enough. However, the flavor was just so bland. I was surprised. I don’t know what I did wrong. There’s so much vanilla in the recipe…it should blow you away!

I will definitely try again once I buy some more cornstarch…and hope that’s the issue!
