Description

A crisp cookie that just melts in your mouth. My family devours them and my friends tell me I should sell them! These are perfect for a bake sale!

Ingredients

  • 1 cup Butter Flavored Shortening
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Old Fashioned Oats (not Quick Oats)
  • 2 cups Rice Krispies
  • 1 cup Sweetened Coconut
  • 1 cup Semisweet Chocolate Chips

Preparation

Preheat oven to 350 degrees F.

Cream shortening, sugar and brown sugar with your mixer until light and fluffy. Add eggs, one at a time.
Add vanilla, and beat until well blended.

In another bowl, blend flour, baking soda, baking powder and salt.

Slowly, add flour mixture to your sugar mixture.

Stir in oats, Rice Krispies, coconut and chocolate chips.

Using a cookie or ice cream scoop, form balls of about 2 tablespoons of dough and place on baking sheet. Be sure to leave about 2 inches between them as these cookies will spread.

Bake at 350F for 10 minutes.

Allow cookies to cool on the sheet for a couple of minutes before transferring to cooling rack to cool completely.
