Light and refreshing! Really quick to put together and takes only 5 main ingredients!
Grind graham cracker into crumbs (in a food processor or similar) and divide evenly between 4 shot glasses.
In a small bowl, stir pudding with coconut extract and lime zest. Spoon evenly between the shot glasses. The pudding should almost reach the top. Refrigerate at this point if you aren’t ready to serve.
Once you are ready to serve, top with whipped cream, toasted coconut and a lime wedge. Serve immediately.
