Ingredients

  • FOR COOKIES
  • 2-¾ cups All-purpose Flour
  • ¾ cups Unsweetened Cocoa Powder
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 cup Butter, Softened To Room Temperature
  • 2 whole Eggs
  • 1-¾ cup White Sugar
  • 2 teaspoons Vanilla Extract
  • For Icing
  • 4 cups Powdered Sugar, Sifted
  • 3 Tablespoons Meringue Powder
  • ½ teaspoons Almond Extract
  • 2 Tablespoons To 3 Tablespoons Milk

Preparation

* Preparation time does not include chilling time.

Sift Flour, Cocoa Powder, Salt and Baking Powder together. Set aside.

Cream butter, eggs, and sugar together until light and fluffy. Add vanilla extract and slowly stir in dry ingredients. When combined wrap in plastic wrap and chill 1 hour.

Preheat oven to 350 degrees. Roll chilled dough to 1/2 inch thick and cut into desired shapes. Bake in preheated oven 10-12 minutes.

They are quite delicious plain or decorate with royal icing:
Meringue Powder is available at Walmart or Bulk Food Stores. To make the icing: Combine Powdered Sugar and Meringue Powder. Add Almond Extract. Slowly stir in enough milk to reach desired spreading consistency.

These are delicious and easy to make. The chocolate flavor is just right, and the cookies roll and cut nicely and keep their shapes well when baking. Definitely a keeper!
