Description

Tart lemon curd and tangy chevre marry together beautifully for a sweet in between a butter waffle cookie sandwich. Perfect for last-minute get-togethers, these are extremely easy.

Ingredients

  • 24 pieces Butter Waffle Cookies (found At Trader Joe's)
  • 8 ounces, weight Chevre (Goat Cheese) At Room Temperature
  • 10 ounces, weight Jarred Lemon Curd

Preparation

Place 12 butter waffle cookies flat on a baking sheet. In a small bowl, whisk together the goat cheese and lemon curd until well incorporated and silky smooth. Pipe or spoon the lemon mixture evenly onto each cookie. Top each with the remaining cookies. Freeze until ready to serve. Makes 12.

Chèvre and lemon curd is a great combination! Tangy and sweet and sour. I wanted a dessert for a “cheese party” that was different from cheesecake or something else with cream cheese. This was the ticket. But I couldn’t find the waffle cookies since we don’t have a TJ’s here so instead I used Anna’s ginger thins, which adds an autumn twist. These are so simple but unexpected.
