Description

Delightfully scrumptious soft yet crunchy cookies that have a wonderful flavor and sweetness without being too sweet, with a hint of cherry.

Ingredients

  • 1 cup Margarine
  • 1 cup Shortening
  • 1 cup Brown Sugar
  • 4 whole Eggs, Separated
  • 2 teaspoons Vanilla Extract
  • 1 cup All-purpose Flour
  • 1 teaspoon Salt
  • 1 cup Granulated Sugar
  • 1 cup Walnuts, Finely Chopped
  • 1 jar (about 10 Oz. Jar) Maraschino Cherries

Preparation

Cream butter, shortening, brown sugar, egg yolks and vanilla. Add flour and salt and blend well until smooth. Chill overnight.

The next day, finely chop walnuts and mix with granulated sugar in a bowl. Quarter the cherries.

Beat egg whites until frothy but not stiff. Roll dough into 1″ balls and dip into egg whites, then into the nut and sugar mixture, completely covering the dough ball. Place onto a Silpat or greased cookie sheet.

Bake at 350 degrees for 5 minutes. Take the cookies out of the oven; take a quartered cherry and press it into the cookie. Place cookies back into the oven for 8 minutes more. Let cool on a cookie rack and enjoy!

Yield: 9-10 dozen cookies.
