Description

These tasty little bites, made in a mini muffin pan, are reminiscent of a candy bar — but with plenty of creamy, homemade caramel.

Ingredients

  • 1 cup Halved Or Coarsely Chopped Salted Peanuts
  • ½ cups Heavy Cream
  • 1 stick Butter, Room Temperature
  • 1-½ cup Brown Sugar
  • 1 Tablespoon Water
  • 1-½ cup Chocolate Chips (milk Or Semisweet)

Preparation

1. Generously coat 24 mini muffin cups with cooking spray. Chop peanuts and sprinkle them into each muffin cup.

2. In a saucepan, combine cream, butter, brown sugar, and water. Stir over medium heat until combined. Then attach a candy thermometer and let the mixture boil, without stirring, until it reaches 240 degrees. This is your caramel mixture.

3. Let caramel cool for about 30 seconds, and then pour a few teaspoons over the peanuts in each muffin cup. (You might have some caramel left over.) Let stand at room temperature for 1 hour.

4. Melt chocolate chips in microwave or in a saucepan over low heat. Spoon melted chocolate over the top of each candy.

5. Refrigerate for 30 minutes.

6. Use a small spatula or knife to remove the candies. Store in the refrigerator if you won’t be eating them right away.
