Description

Super easy no-bake s’more truffles! Everything you love about s’mores without the mess.

Ingredients

  • ½ cups Butter, Softened
  • ¼ cups Brown Sugar, Packed
  • ¼ cups Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup All-purpose Flour
  • 3 Tablespoons Milk
  • ⅓ cups Marshmallow Cream
  • 2 cups Chocolate Chips, Melted
  • 4  Graham Cracker Rectangles, Crushed, Plus More For Sprinkling If Desired

Preparation

In the bowl of a stand mixer, cream together butter and sugars. Add vanilla, mix until combined. Slowly add flour, mix until combined. Add milk, mix until combined. Add graham crackers and marshmallow cream, mix until just combined.

Roll dough into small balls (about 2 teaspoonfuls) and place on baking sheet lined with parchment paper. Place in the freezer for 30 minutes.

Melt chocolate over a double boiler, or slowly in microwave. Dip frozen dough into chocolate until fully coated and place back on lined baking sheet. Sprinkle with crushed graham crackers if desired.

Place in fridge for 15 minutes to set.

Note: I used a very small cookie scoop for my dough, but if you don’t have one, you can use your hands to roll into balls. If the dough is too soft or sticky, let it chill in the fridge for 15 minutes before you roll it into balls.

These were a huge hit with my husband and brother-in-law (“they taste just like real s’mores!”). The most time-consuming part was dipping in chocolate, although the truffles held together well and it wasn’t too cumbersome. I’ll definitely make these again.

Note that the ingredients call for 4 graham cracker “squares” – I wasn’t sure if this referred to four regular graham cracker sheets (rectangle) or two sheets broken into four squares. I did the two sheets/four squares, and it worked just fine.
