Description

Let’s get rid of those four bananas rotting on your counter! This cake doesn’t call for a load of sugar, but gets a lot of tasty help from some cream cheese icing.

Ingredients

  • 4 whole Bananas, Very Ripe
  • 2 teaspoons Baking Soda
  • 1 cup Sugar
  • 2 whole Eggs
  • ⅓ cups Oil
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • ½ teaspoons Salt
  • ½ cups Sour Cream
  • _____
  • For Icing
  • 8 ounces, weight Cream Cheese, Softened
  • ½ cups Butter, Softened
  • 1 teaspoon Lemon Juice
  • 3 Tablespoons Milk
  • 3 cups Powdered Sugar

Preparation

Mash bananas with baking soda. Mix in 1 cup sugar.

Beat in eggs, oil and 1 tsp. vanilla.

Sift together flour and salt. Mix in half of the dry ingredients into banana mixture, then the sour cream, then the rest of the dry ingredients.

Pour batter into three round cake pans. Bake in preheated 350 degree oven for 15 to 20 minutes or until the centers of each cake are set. Let cool on racks, ice.

For icing: Beat together cream cheese and butter. Mix in lemon juice and vanilla. Beat in powdered sugar. Add a few tablespoons of milk to make the icing spreadable.
