Description

A thick, hearty, healthy breakfast cookie that tastes like banana oatmeal.

Ingredients

  • ½ cups Applesauce (unsweetened)
  • 1 whole Banana, Mashed
  • ¼ cups Almond Butter
  • 2 Tablespoons Maple Syrup
  • 1 teaspoon Stevia
  • ¼ teaspoons Almond Extract
  • ½ teaspoons Cinnamon
  • ½ cups Oats
  • ½ cups Oat Flour (oats Processed Into Flour)
  • ¼ cups Wheat Germ
  • ¼ cups Ground Flax Seed
  • ¼ cubes Almond Meal
  • ¼ cups Slivered Almonds
  • ¼ cups Dried Mixed Berries Or Dried Cherries (whatever Dried Fruit You Like)

Preparation

Preheat oven to 350ºF. Line a baking sheet with parchment paper; set aside.

In a large bowl stir together applesauce, banana, nut butter, maple syrup, stevia, almond extract and cinnamon. Stir in oats, oat flour, wheat germ, flax seed and almond meal until combined. Stir in almonds and dried fruit.

With a large cookie scoop, scoop batter on to cookie sheet. You can place them close together since the cookies don’t spread or rise. Bake for 10-15 minutes until lightly golden.

Allow cookies to sit on cookie sheet for a few minutes until they are set enough to move to cooling racks.
