Whenever I’m having a bad day, getting into the kitchen is always a sure-fire way of feeling a little better, especially in the peanut butter form.
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
In a large bowl, add all ingredients and mix until combined. Roll dough into tablespoon-sized balls and place on baking sheets. Sprinkle balls with white sugar and using a fork, press criss-cross marks on top of each cookie.
Transfer to the oven for 10 minutes, then allow to cool on a rack for at least 15-20 minutes.

My friend sent me this link and I hate peanut butter, it makes me gag, however, I can eat my way through a complete batch of these, magical food I must say. I use organic crunchy peanut butter and to be honest, I have to hide them once cooled so my other half has them for work. If I make them on a weekend I have to make more as he keeps taking them. Excellent recipe and so very easy to make. Thank you, very much appreciated. xx
