These cookies are flourless, made with a nutty almond butter, slightly sweet from the combination of sugar and brown sugar, with a rustic feel from the gluten-free oats. Add dark chocolate cocoa powder for a cookie that is gooey on the inside and crispy on the outside!

Rich, sweet, slightly salty cookies without heating up the oven.

I am ashamed to say that I’ve never been a great chocolate chip cookie baker. I’ve attempted them many times, but I’m just never satisfied with how they turn out. Either too flat or too crispy or too cake-like.
I made these tonight and they are perfect. PERFECT! I LOVE them. Thanks for posting this recipe.

So glad to hear!! They are my very favorite chocolate chip cookie. I make them in mass quantities around the holidays to give as gifts, I particularly love them straight out of the freezer.

These were wonderful, although I might just have to double the recipe next time, as the cookie dough was so tasty, not much of it made it to the oven!

Do you recommend using butter flavored shortening or does it matter???? What did you other guys use?

Made these for the second time tonight and they turned out perfect both times. This recipe has replaced my old favorite choc. chip cookie recipe. Thanks for sharing!

I only use the regular Crisco. I think I made it once with the butter flavor and it was just not very good. I think it had sort of a fake butter taste. Sorry I didn’t see this until now!
angelakd- I’m so glad you like them! I try to limit making them – pretty much only make them at Christmas because I have to self control when it comes to eating them!

My batter was very crumbly… like biscuit batter. Then the cookies didn’t melt at all, they stayed in the shape I put them on the cookie sheet. I’m sure this was due to my over-handling them to get them into balls. Now I have cake-like crispy-on-the outside cookies. Is this how they should be? I followed the recipe too (first time ever). They are yummy but not chocolate chip cookie like. I wonder what I did wrong…
